My niece’s Sweet 16!

My niece Cat asked me to make her some cupcakes & cake for her Sweet 16 party this October.  She had asked me for a marble cake with a strawberry filling like I had at my wedding back in 2015.  Cat also wanted to have a layer of her dad’s pineapple upside down cake.  Unfortunately I had to explain to her that I wasn’t advanced enough yet to combine a marble cake with a pineapple upside down, so she compromised.  We ended up with a delectable marble cake with strawberry filling and cream cheese frosting and my first gourmet cupcake – Pineapple Upside In!

It is a light pineapple cake with sweet pineapple filling and topped with maraschino cherry buttercream!

Decadent Faves!

After my niece’s Sweet 16, I started to think that it would be awesome if I could share my love of creating & baking with others.  Then I thought, why not?!  There are so many out there that love to enjoy the finer treats in life but don’t always have the time or energy to make them.  The idea to start a home based cupcake business was born!

Some of my first flavors I made were these two, Tiramisu (center) & Strawberry Cheesecake.  My husband is a HUGE coffee lover and I am a devout cheesecake fanatic.  That’s what made these two simple choices.  Tiramisu is a fluffy vanilla cake with a Kahlua espresso syrup, creamy mascarpone tiramisu filling and sweet Kahlua mascarpone buttercream frosting.  He enjoyed it, even though he said it seemed as if the Kahlua was a bit overpowering in the syrup.  I decided to scale it back some after this batch.

The Strawberry Cheesecake is an airy strawberry cupcake with a graham cracker crust base and actual cheesecake baked in the center with a vanilla cream cheese frosting.  It was like having a small piece of cheesecake in my hand!!!
